Baby Lettuce coated with Vanilla Coconut Rum Dressing

Jerked Filet Mignon on Coconut Roasted Yams Finished with Rum Demi  

Caribbean Tuna
Pepper Glazed Tuna grilled and Rested on Black
Bean Rice then topped with Mango Chutney 

Banana Split
Coconut Tempura Fried Banana served on Rum Cream
Anglaise fresh whipped Cream and shaved Chocolate
